Yes, heavy armor with lots of poise, ideally paired with a strong high stability shield, make pretty much all bosses easy in DS1. Shields and armor are just broken. By the time I got to the DLC I had the Greatshield of Artorias and with that neither Artorias nor Manus were a real challenge.
